Vegan Oatmeal Choc Chip Bites

Hello sweet friends! I'm sure some of you are going through the same routine of circling the fridge, the pantry, the cabinet... Fighting the urge to snack is the absolute worst feeling ever, constantly battling between the desire to stay as healthy as possible while also knowing that we all deserve some grace in times like this. To ease the pain SLIGHTLY (the chocolate and milk are vegan but the sugar is still sugar) I thought I would share my go-to quick fix snack. When I crave sweetness, I don't go for the chocolate bar, I go for the brownie. I don't go for the gummy worms, I go for the pineapple upside down cake. Catch my drift? I'm a girl who loves baked goods almost as much as I love baking them. Unfortunately I have no nutritional info to give you guys but rest assured, this is not healthy... just healthier than the alternative. Slightly. *shrugs*
Ingredients
3/4 cups quick oats
1/4 cup flour
1/4 cup sugar (I use half brown sugar and half white)
1/3 cup vegan chocolate chips
Pinch of salt
2 TBSP coconut oil (melted)
3TBSP almond milk
1 TSP vanilla
Instructions
Preheat oven to 375 degrees.
Combine dry ingredients in mixing bowl , set aside.
Melt coconut oil (microwave about 30 seconds) and mix in almond milk and vanilla. They will stay separated so don't worry when they don't mix.
Add wet ingredients to dry mix, combine. * Your mix will no look like dough- it will look like wet oats and will not stick to each other at all*
Scoop cookie mix into mini muffin pan. Because these cookies will not rise, you'll want to add as much mix as you can into each mini muffin cup.
Bake for 14 minutes, let cool completely before removing (unless you're an absolute psychopath who needs to eat hot cookies right out of the oven, in which case do you but the bites may fall apart a bit if they are still too hot and also I'm judging you)
Store at room temperature.

For coconut oil- Costco is my go to for things like coconut oil, whole coffee beans, things I literally use every day.
